Banana Bran Muffins

My husband loooves muffins, so I always find myself searching for new, healthy and low fat recipes, just to help him indulge without the guilt of eating a 500 calorie small muffin as breakfast.

This recipe is one of our favorites: low fat, lots of fiber and the delicious taste of bananas! You can always add chocolate chunks, raisins or walnuts to make them richer. Enjoy!

Yields: 12 servings

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups of All Bran (Kellogg’s) cereal
  • 1 cup fat-free milk
  • 2 egg whites
  • 2 tablespoons vegetable oil
  • 1 cup thinly sliced ripe bananas, mashed.

Directions:

  1. Preheat oven to 400ºF.
  2. In a medium bowl stir together flour, sugar, baking powder, soda and salt. Set aside.
  3. In large bowl combine the cereal and milk and let stand 3 minutes, until cereal has absorbed milk and it’s moistened. Add egg whites and oil; beat well. Stir in mashed bananas. Add dry ingredients, stirring until just combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray or lined with foil bake cups.
  4. Bake for 15 to 20 minutes or until toothpick inserted in center comes out clean. Enjoy!
